[...] The stuffing I had made had only filled about 2/3 of the roasted peppers, so I simply cut up the rest and froze them for use in a recipe somewhere down the line. Roasting vegetables for freezing is a great alternative to blanching. [...]

I will keep my fingers cross for you that you make it to November without a killing frost! That is indeed a really nice harvest haul for the week. The tomatoes and peppers are particularly appealing because ours are now done for the year.

Sounds like everything is going along just fine on your Homegrown Food Challenge. Excellent! We have two more posts about the Challenge - Day 2 (http://wp.me/p1g6hw-ce) and Day 3 (http://wp.me/p1g6hw-cp). While we're limited in what we've grown, we are doing as much locally sourced stuff as possible. Thank goodness for Sam Adams and Harpoon : )
Good luck! And let me know how that pepper relish turns out.

Wow Jessica, 20 butternuts! That's a great yield from 3 plants. Processing and freezing is always a great way to go. Thanks for sharing!

Thanks for sharing this- it's well-timed. I underestimated the high yield potential of my three butternut plants and have at least 20 butternuts! I've got to figure out winter storage for them, since I have no basement and they won't last at room temperature. I may just process and freeze instead. Will definitely try this recipe!
