		<description><![CDATA[Hello Jennifer. Essentially, when you first start stewing the peppers and other ingredients, they should be in the liquid but not all of the ingredients will be submerged. The liquid level should cover about 1/2 to 2/3 of the ingredients. As you stew them, the liquid level will rise. To get the right consistency, I end up cooking the sauce down for about 4 hours or so at medium temp after running everything through the food mill. It comes down to preference, the longer you cook the sauce down, the thicker it will get. I&#039;ve even done some batches overnight to make sauce that is spreadable.
