Walnut Kale Salad with Fried Eggs and Toast | Recipe Card

This Homegrown Food Challenge recipe was suggested by Art and Lemons, in addition to their suggested recipe for Homemade Pasta with Butternut Squash and Fried Sage Leaves.

I used fresh kale as well as Swiss chard.

I sprinkled chives and parsley over the eggs for extra flavor.

The walnuts and dressing.

I was laughing at myself for putting black walnuts on my ingredients list. The ones I used were actually harvested 2 years ago, but I never got around to eating them, the main reason for that being that the shells are extremely difficult to crack. For these, I used a table vice and some vice grips, well above the average tools needed for liberating nut meats from their shells. It was a good exercise nonetheless so I at least know what I’m in for next time I want to eat some black walnut. If anybody has a better method of opening them, please share.

Mini Breakfast Frittata & Spicy Potatoes – Recipe Card

Sunday Brunch on the Farm

On Sunday we had guests over for brunch. We drank sparkling Mimosas and spicy Bloody Mary cocktails. Our hens continue to lay throughout the winter, so we had plenty of eggs for some delicious omelettes.

I made my own vegetarian Bloody Mary mix:

The table set with ivory Fiesta ware:

A fresh fruit salad in a cabbage bowl with rhubarb serving utensils:

I love the old fashioned Fiesta disc pitchers:

Omelette bar all ready to go:

The hen tablecloth is from Portugal and is perfect for a farm house kitchen:

Eggs and Fiore di Zucca or Fried Zucchini Flowers

It has been an amazing month. We got married, saw many friends and family, and have been busy workin on the farm. In farm news, our hens are laying! Other than my chicken’s eggs I am vegan, so I haven’t eaten an egg in a long time.

Here are our beautiful brown eggs:

My first egg breakfast:

Our garden is feeding us:

Luke picked baby squash, zucchini, and squash blossoms:

We diced herbs and mixed them with vegan cream cheese:

Luke carefully stuffed each bossom:

Here are the blossoms all stuffed:

We battered them in a mixture of flour and beer and deep fried them:

They stayed warm in the oven:

Fried Zucchini Flower:

We ate fried squash blossoms in Sicily. They are such a seasonal treat. The filling made them so rich and flavorful. If you have a garden, try to make this!
